Milk foam is what separates a home white coffee from a café cappuccino, and it depends on the machine far less than people think. It depends on three measurable variables: the final temperature, the proportion of air you incorporate and the fat and protein of the milk you use. Control those three and you get decent microfoam even with a 25 € frother.

Never go above 65 °C. Lactose provides natural sweetness up to that point; above 70 °C the proteins denature, the foam collapses and the boiled-milk taste appears. If you have no thermometer: when you can no longer hold your hand on the jug for more than 3 seconds, stop.
What microfoam really is
There are two different things people call "foam". The large-bubble foam is badly integrated air: it looks rough, separates from the milk in seconds and leaves a dry ring in the cup. The microfoam is milk with millions of microscopic bubbles in suspension: it looks like glossy paint, pours like a dense liquid and is the only kind you can draw with.
The technical difference is when you put the air in. The air goes in only at the start, with the milk still cold, and from there you only swirl the liquid to break up the big bubbles and spread them out. Adding air once the milk is already hot is what produces that scouring-pad foam.

Rule of thumb: with plant milk, always look for the version "barista". It is not marketing: they contain added protein and acidity regulators precisely so they foam and do not curdle on contact with hot coffee.
Method 1: steam wand (the best result)
- Purge the steam wand two seconds before starting to purge the condensed water.
- Cold milk from the fridge, filling the jug to a finger below the spout.
- Tip just below the surface, slightly off-centre. Open the steam fully.
- Air phase (3-5 seconds): you will hear a soft "tss-tss", like paper tearing. Every tick is air going in. If it sounds like loud gurgling, the tip is too high.
- Swirl phase: sink the tip a centimetre and create a spinning vortex. No more air goes in here, the bubbles are just polished.
- Stops at 60-65 °C, tap the jug on the worktop to break surface bubbles and swirl in a circle until it shines.

The V-shaped spout is what lets you pour latte art; without it, it is impossible no matter how good your technique. 600 ml is the all-round size: it holds the milk for two cappuccinos and leaves room for the foam to grow. Thin steel lets you feel the temperature with your hand, which is how you really control it.

Method 2: electric milk frother
It is the default home method and gives a very decent result with zero technique. Three details make the difference:
- Do not fill it. They all have two marks: the upper one is for heating without foaming and the lower one for foam. Going past the lower mark is the number 1 cause of poor foam.
- Use the right disc. The coiled one makes foam; the flat one only heats.
- Tap and swirl when you finish. Same as with a steam wand: two sharp taps and a swirl before pouring.
Electric milk frother with steel jug
An induction milk frother with two discs (one for dense foam and one for heating) solves home cappuccino without a steam wand. It heats to the right temperature and stops by itself. The good ones have a non-stick coating and a removable jug for the dishwasher.

Method 3: by hand and home tricks
You can also do it with no gadget at all. By order of result:
- French press or plunger frother: heat the milk to 60 °C and pump the plunger 30-40 times with short strokes. It is the best method without electricity.
- Jar with a lid: fill a third of the jar with cold milk, shake for 45 seconds, take the lid off and microwave for 30 seconds. The heat sets the foam. It works surprisingly well.
- Handheld milk frother: the usual 8 €. It makes foam, but with big bubbles; fine for a macchiato, not for latte art.

It is a French press dedicated to milk: you heat the milk separately and pump the plunger for 30 seconds. Borosilicate glass, no motor to break and a surprisingly fine foam if you respect the temperature. The most durable option and the cheapest in the long run.

Basic latte art: the heart
Latte art is not decoration, it is proof that the texture is right: if the foam is correct, the pattern almost draws itself. For a heart:
- Start by pouring tall and narrow into the centre of the espresso until the cup is half full. That way the milk sinks under the crema.
- Lower the tip until it almost touches the surface and increases the flow: a round white spot will appear.
- When the cup is nearly full, lift and cut cutting through the patch in a straight line towards the opposite edge. The circle closes into a heart.
If it does not come out, it is almost never your hand: the foam is either too airy or too cold. Go back to the texturing step.
For milk drinks, medium and dark roasts with chocolate and nutty notes work far better than acidic, fruity coffees, which taste of lemon with milk. It is explained in the guide to types of coffee bean.
Common mistakes
- Reheating already-foamed milk. It will not foam twice: the proteins have already done their job.
- Starting with warm milk. You need the journey from cold up to 65 °C for there to be time to integrate the air.
- Leaving milk in the jug. Dried milk on the steam wand carbonises and ruins the flavour of the next one. Wipe the tip and purge immediately.
- Serving late. Microfoam separates in about 60 seconds. Pour it straight away.
